First, the grapes are harvested and pressed to extract the juice. This juice undergoes primary fermentation, where yeast converts the sugars into alcohol and carbon dioxide. After blending, secondary fermentation is initiated by adding yeast and sugar, which creates the wine's effervescence. Finally, a dosage of sugar is added to achieve the desired sweetness level.Cook's Spumante is aged 18 months before it is ready for bottling.
